there’s something really magical about fresh, homemade, garden salsa.
the colors are vibrant. the flavors are unmatched.
and when paired homemade tortilla chips, just so ever slightly salted, you’ll just want to eat the entire bowl.
if you grow nothing else this spring than cilantro, tomatoes and some chili peppers, you’ll still be happy after you make a yummy salsa like this.
so get on out into that garden, work that soil, plant some seeds, and look forward to this yumminess in a few months!
- 3-4 large tomatoes
- 1/2 c. freshly diced mango
- 1/2 c. yellow onion (for sweeter flavor) or red onion (for more spice)
- 1/4 – 1/2 c. cilantro (i use a TON of cilantro)
- 1/4 – 1/2 of a fresh garden chili. i used jalapeno, i think, but i’ve also got serranos and some thai chilis out there. use enough to provide the level of kick you enjoy. remember that the seeds generally are very spicy, so be careful!
- 1/2 to 1 fresh lime, depending on how juicy they are
- salt and pepper to taste
throw all ingredients together and mix together. i prefer to use a mortar and pestle as it really brings out the flavors and blends everything so nicely. i love the fresh lime juice as it gives the salsa a nice acidic kick. let this sit for 30 minutes or so before serving (if you can!!!), as the flavors will all meld so nicely.
when making guacamole, i typically remove the mango, but use all the other same ingredients, using a lot of avocados and mashing all together.
